XMPP (Extensible Messaging and Presence Protocol) is an open standard for real-time messaging that's been around since 1999. Because it's federated — like email — you can message anyone on any XMPP server using a JabberID (e.g. you@yourserver.com). No single company controls it, and no single company can shut it down.
It depends on how you use it. All traffic between your device and the server is always encrypted with TLS — nobody can sniff your messages in transit. For true end-to-end encryption (where even the server can't read your messages), enable OMEMO per conversation. OMEMO is not on by default, but it takes one tap to activate.
Your XMPP roster lives on whichever server you sign up with. Register at xmpp.tel and your contacts are ready immediately. If you're coming from Conversations, create a backup in Settings → Backup and restore it in JabJab — your account, contacts, and message history transfer in seconds.
